    Nettle Soup
    8cups of wate
    1lb Nettle (dipped in hot water and then cut up)
    2 tbsp rice
    4 onions
    2 carrots
    1 parsley root
    2 tbs of butter (melted)
    2 egg yolks
    2 tbs sour-cream
    1 lemon (juice of one lemon)
    salt and black pepper to taste
    1 tbs of parsley and dill chopped

    Salted water is brought to a boil. Add rice, onions, carrots and parsley (celery) root. Boil until semi tender.
    Then add the nettle, washed in hot water and cut up, lemon juice, pepper and greens. Bring the soup to a boil. In a separate bowl mix the egg yolks, sour cream and cooled melted butter. Add to the boiling soup let boil for a 1 minute and turn off the fire.
    Served hot.
