Yummy cod liver salad.
I found this great recipe for cod liver salad on the Dave’s Cupboard blog. I have to say it is quite tasty. I added a bit of mustard and tabasco sauce to mine. You can find canned cod liver in a Russian or Eastern European grocery store. Note: eat this in small doses as it is chock full of vitamins A and D and is extremely potent stuff.. I wouldn’t advise eating the whole can, spread it on a few crackers and share.

Cod Liver Salad

1 can of cod liver in its own oil, drained – reserve the oil
1 small shallot, finely minced
2 or 3 hard-boiled eggs, grated
Salt and pepper to taste

Combine the cod liver, shallot, and eggs in a bowl and thoroughly blend with a fork. If the mixture seems too dry, drizzle in some of the reserved oil in as you mix until the salad is the consistency you desire. This is very good as a filling for small tomatoes, or simply spread on bread or crackers.

Why eat cod livers?
According to the Weston A. Price Foundation , cod liver oil provides fat-soluble vitamins A and D, that are a must for women and their male partners, to be taken for several months before conception, and for women during pregnancy. Growing children will also benefit greatly from a small daily dose. Dr. Price travelled the world studying primitive people to understand why they did not get cavities even into old age even though they did not brush their teeth or practice any form of oral prophylactics. During his studies he also found that these people, who consumed some form of animal fat (often seafoods and livers) also did not suffer from other modern degenerative diseases such as diabetes, arthritis and difficult births and birth defects. He concluded that simple changes in diet could prevent disease and lead to recovery from disease. The main points are to eat whole foods (whole wheat, not white), cod liver, fresh raw butter from grass eating cows and some animal products in their raw form and seafoods along with some vegetables. He used this diet to treat dying patients and help bring them back to health.
